Recipe: White Chocolate Mousse

Ingredients
250ml cream (beaten until thick and creamy)
250g white chocolate (melted)
5 egg whites (beaten until stiff)
1 tbsp sugar
½ tsp vanilla essence
100g milk chocolate (grated over the top)
Method
Place the egg whites and sugar in a bowl, beat with whisk until the egg whites are stiff. In another bowl beat the cream until thick and smooth. Place a pot on the stove with two inches of water in it and bring it to a simmer.
Place the white chocolate in a bowl and sit the bowl in the pot and melt until smooth. Combine all three ingredients in the bowl with the egg whites: fold through the cream, then add the chocolate, lastly adding the vanilla essence.
Once it is all thoroughly combined together, pour into individual glass bowls leaving a one inch gap from the top. Allow the mousse to chill in the fridge all day.
When you are ready to serve, place a piece of chocolate in the centre of each one and grate a little milk chocolate over the rest.
