Recipe: Meatball Pasta Bake

Serves 8


600g minced beef
¼ cup fresh oregano
¼ cup fresh basil
3 cloves garlic
1 large red onion
Salt/pepper to season
1tbsp Worcestershire sauce
½ cup breadcrumbs
1tbsp tomato paste
2 eggs
Extra virgin olive oil
420g can tomatoes
2 ½ cups tasty cheese
2 cups milk
2tbsp flour
50g butter


Preheat oven to 175C. Dice the onion and garlic into small pieces. Place the beef in a bowl, season with salt and pepper, add the fresh herbs, onion, garlic, Worcestershire sauce, tomato paste and breadcrumbs.

Next add the eggs and combine all the ingredients together. Take a dessert spoonful of mixture and roll it into a ball. You want them to be about 4cm in diameter, not tiny little meatballs. Place the meatballs on an oven tray and drizzle with olive oil. Bake for 20mins. Now make the cheese sauce.

Place the butter in a pot and melt. Add the flour and stir quickly. Pour in one cup of milk and stir into a smooth paste. Add one cup of cheese, keep stirring. You will need to keep adding milk as you go.

You want a creamy smooth sauce, not a lumpy one. Add the second cup of cheese and more milk. Place to the side for later. Once your meatballs are cooked place them in a lasagne-style dish. Next pour over your tomatoes and then the creamy cheese sauce.

Make sure you get a generous covering all over the meatballs. Sprinkle with the remaining cheese and bake for 25mins.
