Recipe: Lemon Tart1 Feb 2012
Serves 6 to 8
150g lemon curd (from a jar)
150g cream cheese
Zest from one lemon
100g Hobnob biscuits
100g chocolate digestive biscuits
2 tbsp brown sugar
50g melted butter
Fruit to decorate
Place the biscuits in a food processor and blend until they are all crushed into a fine mix. Place the crumbs in a bowl and add the butter and sugar.
Mix with your hands. You want the mixture to have a wet consistency.
Take a tart mould and press the biscuit mixture into the bottom making a 2cm thick base. Place the mould in the fridge and allow to set.
Lemon Curd Mixture:
This is a simple and fast way to make a delicious tart. Combine the lemon curd, the cream cheese, mascarpone and zest of lemon in a bowl and mix with a spatula until creamy and smooth.
Once the biscuit base has set, simply pour the lemon mixture on top and spread out evenly. Place
in the fridge overnight to set. Decorate the top with seasonal fruit of your choice.
