Recipe: Berries and Red Wine Sorbet1 Nov 2011
Serves approximately 6-8
450g mixed berries—blueberries, blackberries, raspberries and strawberries
75ml red wine
110g castor sugar
Berries to garnish
Put the mixed berries and water in blender and blend until the mixture is smooth. Then pour into saucepan and stir in the sugar, turn on heat and bring just to a boil and remove from heat. Allow the mixture to cool to room temperature, and then press mixture through a fine mesh sieve. Discard what remains in sieve; stir the wine through the berry mixture. Pour into a cold bowl and cover, place in freezer for approximately three hours. Remove from freezer and put into blender again and blend until smooth. Pour into cold bowl, cover and freeze for at least another hour. Ready to serve anytime. Garnish with berries.
