Many of us start the New Year resolving to get fitter or live a healthier lifestyle. Here are a few recipes to help you with your plans.
For a healthier lifestyle, most health professionals will recommend eating more fruit, vegetables, fish and lean white meat. You will find lots of vegetables in these dishes. My husband argued that the chicken cacciatore could not be considered a healthy dish because it includes mascarpone cheese.
However being a casserole all the goodness of the food is retained and using skinless chicken breast keeps the fat content down. So perhaps a little latitude can be taken with the mascarpone cheese. Jo prepared two great wholesome dishes.
